Ravioli with mushrooms and parsley

Ingredients for 3-4 servings:

– 500g ravioli with cheese filling

– 250g mushrooms

– 250g low-fat cream

– 100g sun-dried tomatoes

– 2 garlic cloves

– 50-100g parsley

– salt, pepper, olive oil

Boil the ravioli according to their cooking instructions.

In a pan with hot olive oil, add the mushrooms and the garlic, both sliced.

Then, in 4-5 minutes, add the cream and season with salt and pepper.

Chop the sun-dried tomatoes, add them too and stir.

Two minutes before you are about to drain the pasta, add the parsley as finely or roughly chopped as you like.

Take half a cup of the water (or more, depending on the thickness of your cream) where the ravioli is boiling and add it to the sauce, too.

Stir until it becomes homogeneous.

Drain the ravioli in a colander…

…and add it to the sauce. Stir and serve.
