Feta cheese, tomato and eggs make a delicious combination. In Greece, “strapatsada” or “kayanas” is prepared in a frying pan by mixing and stirring these three ingredients. However, our respective pasta version turned out to be an equally great success.

Ingredients for 4 servings:
– 500g Greek noodles (hylopites)
– 200-300g feta cheese
– 500g ready-made tomato sauce
– 2 green peppers, chopped
– 1 clove of garlic, finely chopped

Start boiling the noodles in salted water according to the boiling instructions.

Chop the peppers and put them in a pan with olive oil along with the garlic.

After the peppers have softened, add the content of your pre-made sauce (that is really lazy, I know, but don’t feel guilty, it’s part of a creative process…).

2 minutes before you drain the noodles, break an egg in the tomato sauce and stir quickly.

The egg will make the sauce turn rather pinky. Add pepper and some salt.

After draining the noodles, add them to the sauce and stir.

Add more pepper if you feel like it.

In the end, break the feta in the pan with a fork or your own hands (that is, if your guests know you enough to oversee the lack of savoir vivre…).
