Conchiglioni tricolore with chicken, spearmint and paprika

Spearmint is usually processed and used just like oregano: you dry the leaves and then use them as a condiment or salad / sauce ingredient.

However, here you can use them fresh in a rather bold, spicy and definitely delicious recipe of pasta -without cheese…

Ingredients for 4-5 servings:

– 500g conchiglioni tricolore

– 300g boiled chicken breast

– 2 garlic cloves

– 1 zucchini

– 1 te spoonful paprika

– 2-3 teaspoonfuls mustard

– 20 spearmint leaves

– salt, pepper

 

1.

If your chicken breasts have already been cooked, boil some salted water in a pot and add the conchiglioni.

When your chicken breast is ready, remove any skin and cut in pieces.

Start stir-frying the chicken and add some paprika -either sweet or spicy.

4.

Grind the zucchini and finely chop or squash the garlic.

5.

Optionally add some more paprika according to how spicy you would like the food to be.

6.

Just one minute before the conchiglioni are ready, cut off the spearmint leaves.

Add the entire leaves to the chicken and don’t worry if they instantly turn much darker -it’s perfectly normal!

Add the mustard and quickly drain the conchiglioni in a colander.

Add the pasta to the mix, stir and remove from the fire.
