Ingredients for 3-4 servings:
– 250g elbow macaroni
– 1 escarole endive
– 150-200g gruyère cheese
– 2 radishes
– 2 spring onions
– 1/2 cup parsley leaves
– juice of 1 lemon
– salt, olive oil
1.
Boil the pasta according to the instructions on the package.

Chop the spring onions, which always make an excellent combination with the lemon juice.

Wash, dry as much as possible and chop the escarole endive. Then put it in a bowl with the onions.
4.
Finely chop the radishes and add them into the salad bowl.
5.
Finely chop the parsley and toss it in as well.
6.
Cut the gruyère in cubes and add it in the bowl.
7.
When the elbows are ready, drain them in a colander and rinse them with cold water.
8.
Add them into the bowl, add the lemon juice, salt and olive oil and mix.
Amazingly healthy, genuinely attractive.
